Monsoon Menu: Mango Pastries Are Back for 60 Days Only

Every May, as soon as Alphonso mangoes arrive from Ratnagiri, our pastry team switches to mango mode. We simmer the mangoes into a bright compote, fold it into whipped cream, and layer it between two sheets of feather-light vanilla sponge.

Why 60 days only?

We only use fresh Alphonso — never puree. When the season ends, the pastry goes with it. That's why people pre-order 3 at a time.
